You may have an image like abura-soba or soupless ramen, but it’s not right because Tokyo Mazesoba is a new genre. Also it’s different from Japanese Soba. Ever-popular menu is a little spicy, so you should try “Shio (Salt) Mazesoba” if you don’t like spicy taste.

This is Tokyo Mazesoba
Mazesoba, literally translated as mixed noodle. is ramen without soup, It has spicy hot minced pork, raw egg yolk, seaweed, Chashu, Green onion, bamboo shoot, minced garlic etc. on top.
History
The 1st branch opened at Tokyo, Japan in 2014 by Takuma Ishikawa. The location is in residential street, actually many ramen shop was repeat to open and close… almost all people thought that the location is not good as ramen shop. However after open, there was a line in front of shop everyday. Tokyo Mazesoba caught the hearts of people.
In that year, KOKORO prized in Best Ramen Awards 2014.
